- Vinification:Manual harvest in 20kg baskets. Removing and pneumatic pressing. Decantation 48 hours at 10ºC Fermentation with temperature control in stainless steel vats between 14º C and 16º C. Having 15% fermented in French oak. Batonage for 3 months. Cold stabilization and microfiltration before bottling

Palate: the good structure makes it complex, fresh and round. Final taste: Elegant, long and invigoratingConsumption, longevity, and gastronomy Given its complexity, freshness, and structure, this wine can be served as an aperitif or as an accompaniment to a meal of fish or seafood, salads, Indian cuisine, as well as light meat dishes. It should be consumed between 10 to 12º C. up to 4 years preferably young.«The production of wines at CASA DO VALLE dates back to the 18th century, but it was only after 1989 that we started bottling them under the name of this Quinta. It is with great pride that, in 2009, we launched CASA DO VALLE GRANDE ESCOLHA, thus celebrating the 20 years of the first bottling of this brand of ours. »
