HARVESTING
The olives are handpicked, transported in small boxes of 20 kg, and reach the mill in less than two hours in order to preserve their maximum quality and freshness.
PROCESSING
After cold mechanical extraction, the oil is decanted into stainless steel tanks, resting there between 4 and 6 months before being bottled.
